MEET THE OWNER OF NOBORI SUSHI

Noboru Nakamura

Noboru Nakamura has spent more than 40 years working with sushi, and it has been his lifelong passion. He started out as a young sushi chef in New York City’s Greenwich Village, then moved to Chicago in 1988, where he continued to grow as a restaurant manager. In 2009, he opened Nobori Sushi to share his love of fresh, authentic sushi with the community.

The name Nobori—which means “sunrise” in Japanese and is closely tied to his own name—reflects a new beginning. Just like the sunrise, Nobori has continued to shine brighter over the years, becoming a local favorite for its freshness, quality, and warm, welcoming atmosphere.

Mr. Nakamura would be delighted to welcome you to Nobori Sushi and hopes you’ll feel right at home while enjoying a meal made with care.
